CORRECT.
This puzzle was a rail fence cipher, though it included an intentional transcription error.

Oh hey puzzles.

Of note; the tombstone is nigh-identical to its source image, with the sole alteration being the addition of the noise. I will admit I passed over it only very quickly, but I'm otherwise quite sure. I'm also going to assume that this isn't the irksome sort of puzzle where there's something hidden in the noise. Leaving that, the coordinates 48.850255, 2.34388 land you slap bang on Google Maps's marker for Musée de Cluny, where the tombstone is housed. This is at least consistent, if a little uninteresting.

Given the lack of satisfactory leads, I reckon we need to do a bit more exploring of this ADS thingy:

Hmm, that's weird; I was rather expecting us to be theta, but Wolfram Alpha informs me that the character is in fact "circled minus"...

Well, circled minus is the closest to the actual alchemical symbol for salt. Given that we're dealing with Flamel and partnered with Mercury, that's a pretty good guess as to what' happening. The real question is what will happen when we need to deal with Sulfur, as there's nothing close that's not in UTF-16.
